MARINADES
White Wine and Tarragon
Combine 1-1/2 cups dry white wine
1/2 cup white wine vinegar
2 finely chopped shallots or onion,
1/2 cup chopped fresh tarragon
2 teaspoons extra virginia olive oil
1 teaspoon ikoisher salt

Bourbon-Apple
1 cup bourbon
1 cup unsweetened apple cider or juice
1 teaspoon Worcestershire sauce
1 teaspoon canola oil
1 teaspoon kosher salt

Hot and Spicy
1 1/2 cups low-sodium chicken broth
1/4 cup Tabasco jalapeno hot pepper sauce
1/4 cup distilled or cider vinegar
2 finely chopped garlic cloves
1 teaspoon canola oil
1 teaspoons kosher salt

Tequila-Jalapeno Marinade
1 cup tequila
2 thinly sliced jalapeno chiles
1 finely chopped shallot
2 finely chopped garlic cloves
1/2 cup chopped fresh cilantro
1/2 cup olive oil
Juice of 2 limes
1/2 cup honey
1 teaspoon sea salt

Jamaican Jerk Marinade:
In a bowl, combine:
1/4 cup finely chopped scallions
2 cloves garlic -- minced
1 tablespoon olive oil
1 tablespoon Tabasco Habanero sauce
2 teaspoons ground allspice
1 teaspoon ground cinnamon
1/2 teaspoon kosher salt
1/2 teaspoon ground nutmeg

Beer Marinade
7 cups ale or dark beer
3/4 cup brown sugar
1/2 cup kosher salt
1 chopped small onion
4 crushed garlic cloves
3 tablespoons Dijon mustard
1 tablespoon chopped fresh thyme
1 bay leaf
Pinch crushed red pepper

DRY RUBS
Paprika Rub
2 tablespons smoked paprika
1 teaspoons onion powder
1 teaspoon kosher salt
1 teaspoons coarse ground black pepper
Pinch granulated sugar

Cumin Rub
1 tablespoon ground cumin
1 teaspoon kosher salt
1 teaspoon coarse ground black pepper
1 teaspoon Ancho chile powder
1 teaspoon garlic powder
1/2 teaspoon ground cinnamon

A Good Basic Chile Rub
In a small skillet, toast---and then grind:
1 tablespoon ancho chile powder
1 teaspoon cumin seeds
1 teaspoon coriander seeds
Add to the ground seeds:
1 teaspoon garlic powder
1 teaspoon cayenne

"Texas Cooking" Dry Rub
In a bowl, combine:
* 1 tablespoon ground black pepper
* 1 tablespoon ground white pepper
* 1 tablespoon sugar
* 2 teaspoon cayenne pepper
* 2 tablespoon chili powder
* 1 tablespoon cumin
* 1 tablespoon garlic powder
* 1 tablespoon brown sugar
* 1 tablespoon ground oregano
* 4 tablespoon paprika
* 1 teaspoon dry mustard
* 1 tablespoon celery salt
* 1 tablespoon salt

Five-Spice Rub
2 talbespoons five-spice powder
1 teaspoon kosher salt
1 teaspoon coarse ground black pepper
1/2 teaspoonb onion powder
1/2 teaspoon brown sugar

Fennel and Herb Rub
1 tablespoon ground fennel seeds
1 tablespoon herbes de Provence
Kosher salt and coarse ground black pepper

SEASONING PASTES
Chile-Lime Seasoning Paste
4 garlic cloves finely chopped
1 teaspoon kosher salt
1 canned chipotle chile in adobo sauce
+ 2 teaspoon of the adobo sauce
1 teaspoon smoked paprika
Juice of 1 lime

Lemon-Herb Paste
In your food processor, puree: 1/2 cup fresh parsley
1/2 cup fresh dill
1/2 cup fresh basil leaves
1 shallot
1 teaspoon kosher salt Grated peel and juice of 1 lemon
With machine on, gradually add:
2 tablespoons olive oil

Spicy Jerk Paste
In your food processor, puree: 1/2 cup chopped onion
4 cut up scallions
1 tablespoon ground allspice
1 tablespoon coarse ground black pepper
2 teasoiibs dried thyme leaves
2 teaspoons ground cinnamon
1 teaspoon kosher salt
1 teaspoon granulated sugar
A few splashes Tabasco Habanero Pepper Sauce
With machine on, gradually add: 2 tablespoons olive oil

Thai Chile Paste
In your food processor, puree: 1/2 cup fresh basil leaves
1/2 cup fresh cilantro leaves
2 garlic cloves
1-2 stemmed Thai chiles
Grated peel and juice of 1 lime
1 teaspoon fish sauce or soy sauce
1/2 teaspoon koisher salt
With machine on, gradually add: 2 tablespoons olive oil
