MORE GREAT IDEAS FOR AFTER-SCHOOL SNACKS
GARLIC BAGEL CHIPS:
Melt 3 tablespoons butter with 2 chopped garlic cloves. Cut bagels in half crosswise and brush the butter mix onto the cut sides. Bake 10 minutes at 325F. Serve topped with grated Parmesan cheese.
FRESH FRUIT DIP
Mix 1 cup low fat plain yogurt with 2 tablespoons each brown sugar and lime juice, and sprinkle with cinnamon. Serve with large chunks of fresh fruit. Thread fresh fruit onto skewers if desired.
CARAMEL POPCORN
Melt 1/3 cup melted butter with 1 tablespoon honey and a pinch of kosher salt. Toss with about 12 cups popped popcron.
Add 1 cup pecans if desired. Spread on a parchment-lined baking sheet ande bake 15 minutes at 325F.
SESAME TATER SLICES
Toss thinly sliced unpeeled russet potatoes with olive oil and kosher salt. Spread on parchment-lined baking sheet, sprinkle with sesame seeds, and bake at 425F. 10 minutes.
CINNAMON TWISTS
Unroll a refrigerated pie crust and brush lightly with a little melted butter. Sprinkle with cinnamon and sugar and cut lengthwise into 1/2-inch strips. Twist the strips and bake on parchment-lined bakiing pan at 425F. 8-10 minutes.
CHEESE AND CHILE CRISP
Place 8-inch flour tortillas on parchment-lined baking sheet and sprinkle liberally with shredded Cheddar cheese. Drain 1 4-oz. can of choped green chiles and sprinkle evenly over the cheese. Bake at 375F. 10 minutes.
APPLE AND CHEESE QUESADILLAS
Spray a non-stick skillet with PAM and lay a flour tortilla in the pan. Top one side of the tortilla with shredded Cheddar cheese and thinly sliced apples. Fold tortilla in half and cook until golden on both sides. Cut nto wedges.
BEANIE ROLL-UPS
Spread a flour tortilla with canned refried beans, top with shredded Chedddar cheese and roll up. Brush with canola oil and bake 10 minutes at 400F.
PLENTIFUL POCKETS
Roll out refrigerated pizza dough to 1/4-inch thick and cut into 3- ot 4-inch rounds. Top one half with desired filling, brush the edge with beaten egg, fold im half and press to seal. Poke a vent hole in the top and bake 20 minutes at 400F.
FILLING:
1. Dollop of cream cheese and jam.
2. Dollop of ricotta cheese, diced apple, and a pinch of cinnamon and sugar.
3. Chopped cooked broccoli and shredded Cheddar cheese.
4. Pizza sauce and shredded Mozzarella cheese. Add a slice of pepperoni if desired.
5. Dollop of fat-free plain yogurt and a few chocolate chips.
6. Peanut butter and jelly.
