Heat Scale = Mild 1 tablespoon Olive Oil 1/2 cup chopped Onion 1 clove Garlic -- minced 1 1/2 cups diced Zucchini 1 cup Corn 1 1/2 cups Salsa 2 tablespoons chopped fresh Cilantro In a large skillet, heat oil; saute onion and garlic until soft. Stir in zucchini, corn and salsa; simmer uncovered about 7-8 minutes or until tender. Stir in cilantro; serve hot or warm.
