GERMAN POTATO SALAD BAKE
This is my personal favorite, because it's so easy and tastes really great! I have no idea where the recipe came from.
Serves: 6-8
Prep.Time : 30 minutes
6 slices Bacon -- cut in 1" pieces
1/2 cup Onion -- chopped
1/2 cup Celery -- chopped
3 tablespoons Flour
1/2 teaspoon Salt
1/8 teaspoon Pepper
1 3/4 cups Water
1/2 cup Cider vinegar
1/2 cup Sugar
6 cups unpeeled Red Potatoes -- cooked and sliced
Preheat oven to 375 degrees. In medium skillet, cook bacon until crisp; drain and set aside. Saute onion and celery in drippings. Stir in flour; cook and stir to make a roux. Add water and vinegar to roux; cook and stir until thickened and bubbly. Add sugar; cook and stir until dissolved. Place potatoes into a greased 13x9x2 baking dish and sprinkle bacon over top. Pour sauce over all. Bake uncovered 45 minutes. Serve warm or at room temperature.
