Serves: 4 Prep.Time: 20 minutes 1/4 cup Butter 2 cups fresh Corn cut from the cob 1/4 cup chopped Onion 1/4 cup chopped Green Pepper 2 tablespoons Brown Sugar 1/2 teaspoon Salt 1 large Tomato -- diced Melt butter in a medium sauacpan; add corn, onion, pepper, brown sugar and salt. Cover and simmer 8-10 minutes, or until al dente. Stir in tomato; cover and simmer 4-5 minutes longer, or until vegetables are tender but not mushy. Serve immediately.
