Serves: 2 Prep.Time: 30 minutes Recipe By : Curtis Aikens (Food TV Channel) 2 leeks, trimmed white parts only -- sliced 1 tablespoon reduced-fat margarine 1 cup chicken broth Salt and pepper to taste fresh thyme sprigs for garnish -- optional In a 8-inch skillet, saute leeks in margarine; add chicken broth to almost cover. Cover pan; cook 18-20 minutes or until tneder. Remove leeks to serving bowl; reduce cooking liquid and pour over leeks. Garnish with thyme if desired.
