FANTASTIC FLOUNDER
I've featured this recipe before, and it was a real hit. This is quick and really easy to prepare. Serves: 4
Prep.Time: 30 minutes

4 fresh flounder fillets
Juice of 1 lemon
Salt and Pepper to taste
1/2 cup grated Parmesan cheese
3 tablespoons butter, softened
3 tablespoons mayonnaise
1 tablespoon chopped fresh dill, or 1 teaspon dried dill weed
Dash of Tabasco sauce

Place fillets in a single layer in a glass or non-reactive shallow dish. Brush with lemon juice; season with salt and pepper and let stand 10-15 minutes. In a small bowl, combine remaining ingredients. Place fillets on a well-oiled broiler pan; spread butter mixture over top of the fillets. Broil fish 3 inches from heat 4-5 minutes or until the top is golden brown and bubbling. Serve immediately.
