SALSA FRESCA
This is THE salsa---for wimps and cowards! Seriously though, many people can't handle the real hot stuff and piles of chiles; therefore, you use this one (we don't!).
Heat Scale = Mild
3 medium Tomatoes -- seeded and chopped
1 small Green Bell Pepper -- finely chopped
1/2 cup thinly sliced Green Onions, with tops
2 tablespoons or more Lime Juice
2 tablespoons chopped fresh Cilantro
1 tablespoon finely chopped Jalapeno Chile
3 cloves Garlic -- minced
1/2 teaspoon Salt

Combine all ingredients in a medium bowl; mix well. Cover and refrigerate 2-3 hours before serving. Makes about 3-1/2 cups.
