SAUTEED TURKEY CUTLETS LITE

October 2009---with finding a way to lighten up fried turkey breast cutlets. This is the result. We've done this one twice without changing a thing---and we both love it! You don't have to be on a diet to enjoy this one!
Serves 2 but easily duplicated

1/2 cup Panko bread crumbs
1/4 cup grated FRESH Parmesan cheese -- Not that boxed stuff
1 tablespoon finely chopped fresh sage leaves -- o2 2 tsp dried
1/4 teaspoon celery salt
1/4 teaspoon onion salt
1/4 teaspoon coarsely ground pepper
2 turkey breast cutlets -- 4 oz. each
1 tablespoon extra virgin olive oil
Chopped parsley for garnish

In a shallow dish or pie pan, combine the Panko, cheese, and seasonings. Coat the turkey cutlets thoroughly on both sides with the mixture.

Heat the oil in a medium skillet until hot and shimmering. Add the turkey cutlets and sautee about 3 minutes per side or until cooked through. Serve immediately.
