Yields 3-1/2 to 4 dozen Prep.Time: 25 minutes 2 cups Sugar 1 cup Butter -- softened 2 Eggs 2 teaspoons Vanilla Extract 3 cups All-purpose flour 3 teaspoons Cinnamon 2 teaspoons Baking Powder 1 teaspoon grated Lemon Peel, or Lemon Zest 1/2 teaspoon Salt CINNAMON -SUGAR: 1/2 cup Sugar 2 teaspoons Cinnamon In a large mixing bowl, cream together sugar and butter until well-mixed; beat in eggs and vanilla. In another bowl, combine flour, cinnamon, baking powder, lemon peel and salt; add gradually to butter mixture, blending well. Cover dough tightly with plastic wrap; refrigerate 1-1/2 hours, or until firm. Preheat oven to 350 degrees; combine cinnamon and sugar in a small bowl. Shape dough into balls, about 1" in diameter; roll in cinnamon-sugar to coat. Place cookies on an ungreased cookie sheet 2 inches apart, flattening slightly with fingers. Bake 10-12 minutes, or until edges are lightly browned. Cool slightly on pans, then remove to a wire rack to cool completely. Makes about 4 dozen.
