Serves: 6 Prep.Time: 45 minutes 1 1/2 pounds Beef Stewing Meat -- cut in 1/2" cubes 1/4 pound Bacon -- cut in 1/2" cubes 1 medium Onion -- chopped 2 cloves Garlic -- minced 2 tablespoons Butter 6 tablespoons Flour 2 large Potatoes, peeled -- cubed 2 large Carrots -- thinly sliced 1 Red Bell Pepper -- chopped 1 can Tomatoes (16-oz.) with juice 2 quarts Beef Broth 2 tablespoons Paprika 1 teaspoon Salt 1 teaspoon Pepper 1 teaspoon Sugar 1/2 cup Dry red wine 2 tablespoons Red Wine vinegar Lightly salt the meat; cook with bacon, onion and garlic in butter in a large Dutch oven until brown. Place mixture in a slow-cooker and sprinkle with flour. Add the remaining ingredients; mix well. Cook on low all day. Thicken slightly if desired.
