Yields 8-9 squares Prep. Time: 15 minutes + 30 minutes Baking 3 cups shredded Montery Jack cheese 2 cups shredded Cheddar cheese 2 cans chopped green chiles (4 oz.ea.) 1 small tomato -- diced 2 eggs 1 tablespoon all-purpose flour Preheat oven to 375 degrees; Liberally grease an 8-inch square baking pan. In a bowl, combine the cheeses and spread half on the bottom of the prepared pan. Sprinkle with the chiles and top with the diced tomato; top evenly with remaining cheese. In a bowl, whisk the eggs; then whisk in the flour. Pour over the cheese and bake 30 minutes or until set. Cut into squares and serve warm.
