NANCY'S WHOLE WHEAT BREAD
Just received 12/30/08 from "Granny" in the Baking Circle. She says, "This loaf is a nice, soft sandwich bread and makes excellent toast.."

1 2/3 cups water
3 tablespoons butter
3 cups bread flour
2 cups whole wheat flour
1/4 cup sugar
1 1/2 teaspoons salt
4 teaspoons instant yeast

Place all ingredients in bowl of stand mixer. Mix then knead dough until it forms a ball on the hook and there is just a little dough in the bottom of the bowl. Place in greased bowl, cover, and let rise until double.

Divide dough in half and place each half in a greased loaf pan. Cover and let rise again until loaf has crowned about 1" over top of pan.

Bake in preheated 375°F oven for about 35 minutes till golden. Temperature of bread should be 190 degrees when measured with an instant-read thermometer. Remove from pans and cool on wire rack. Makes 2 loaves.
